I CAN do this - Raspberry Jam without Pectin or Refined Sugar

Now that I feel like I mastered making strawberry jam without pectin or refined sugar, it's time to move on and can some raspberry jam.  I had so much success with the 100 Days of Real Food strawberry jam recipe that I decided to use it again.  The end result did not disappoint, however, I should point out that the jam is not thick because the recipe does not use pectin.

Why no pectin? Pectin is a natural occurring thickening agent and is extracted from fruit such as apples, plum, gooseberries and oranges.  Some commercial pectins add dextrose or may contain artificial sweeteners, fillers or chemicals.   If you are buying a "pure" commercial pectin you may have no idea the pesticides/herbicides that were used on the fruit it was extracted from. 

Half flat of raspberries
3/4 cups honey
1 1/2 unpeeled apples, grated 
1 1/2 Tablespoons lemon juice
